Why do I need so much sugar? Can I use anything else?

Like other fermented foods and drinks, Kombucha needs something to feed on. The bacteria and yeast in kombucha needs sugar so they can do what they are supposed to do. Sugar and the tannins in the tea, are the main food of Kombucha. You cannot use honey, because honey has antibacterial properties that may not be good for the bacteria in the SCOBY.

Can I use herbal tea?

Yes, you can use herbal tea. But it would be best if you blend it with real teas, i.e, black, green, white, oolong and others. Kombucha needs the tannins in tea to live.

Will my Kombucha be alcoholic?

Yes. Like any other fermented foods, Kombucha can be alcoholic. The longer you let it ferment, the more alcoholic it will become. Most homebrewers like me don’t have the equipment to test the alcohol level in our ferments. But it is not as strong as beer and other alcoholic beverages. You may feel boozy at first, but you will get used to it eventually.

What if my Kombucha gets mold?

If you think your Kombucha has mold, make sure it really is mold. Sometimes, SCOBY can produce particles that look like mold, but are actually Kahm yeast. If it is not fuzzy, greenish in color, dry and grows on top of the SCOBY, it is probably not mold. Send us a picture at [email protected] so we can identify if it is mold or not.
